Gyeongyeop is the stem and leaf of amaranth. It is a sub-entry under amaranth in the vegetable section of Dongui Bogam; the chambireum blanched as a summer namul today belongs to this group. The text says there are six kinds of amaranth but only inhyeon and baekhyeon go into preparations.

補氣, 除熱, 通九竅.
It supplements gi (氣), removes heat, and frees the nine orifices.
HomiclubThe stem and leaf of amaranth are the tender summer growth blanched and dressed as a namul. Plants with reddish stems and green ones grow side by side, and the leaves are diamond-shaped with a slight notch at the tip.
