鹿頭酒 Saseummeori Sul (사슴머리 술)

Nokduju is wine brewed from the broth of a simmered deer head. Despite how the name sounds it has nothing to do with mung beans; the first character is deer. It appears as a single line among the many wines listed in the grain section.

  1. 補氣血. 煮鹿頭取汁, 釀酒也.

    It supplements qi and blood. A deer's head is boiled, the broth taken, and liquor brewed with it.

    HomiclubThe reading nokduju coincides with that of the mung bean, but the character here is nok (鹿), deer. It is brewed not from grain or fruit but from an animal broth, and no such method survives in Korean brewing.
