Proso Millet
Panicum miliaceum
Carbohydrate and fibre · a grain that ripens in a hundred days
Proso millet is an annual grass grown as a minor grain, and although it resembles foxtail millet it is a different crop. Proso carries a loose panicle that nods to one side; foxtail millet holds a dense, upright spike shaped like a bottlebrush. It runs about a hundred days from sowing to harvest and tolerates dry ground well, which makes it a fair candidate for a rooftop bed or a spare corner of a plot. The Donguibogam lists it in the Grain section as 黍米 with the Korean name gijang-ssal, giving it a warm nature, a sweet taste and no toxicity. The same entry distinguishes it from foxtail millet and divides it by stickiness: the glutinous form is 秫, brewed into liquor, while the non-glutinous form is 黍, cooked as grain.

Where It Grows
- Main producer Most of the crop is grown on the dry fields of the Volga basin and the southern steppe.
- Main producer The center of production is the dry zone of North China — Shanxi, Gansu, Inner Mongolia and other areas of the Yellow River basin — which is also where proso millet cultivation began.
- Major producer It is grown as a minor grain on the low-rainfall fields of the Deccan Plateau and Rajasthan.

The earliest traces of its cultivation come from Neolithic sites in the Yellow River basin of northern China, which is regarded as the crop's place of origin. It spread westward along the Eurasian steppe, taking hold in the dryland farming of Russia and Ukraine, and crossed to the Great Plains of the United States in the 19th century. One caution: the FAO counts proso millet, foxtail millet, pearl millet and others together as "millet," so India, Niger and Nigeria appear near the top of the rankings — but most of what they grow is a different species, not proso millet.

Proso millet is a summer annual with a short growing season of around 100 days and low water use. It has one of the lowest water requirements of any grain, so it is grown on inland continental plains and mountain fields where rainfall is scarce. It is sensitive to frost and must ripen before the first frost arrives.
In Korea Nationwide
Drought-hardy and quick to mature, it has long been grown as a minor grain in mountain areas and on poor fields. It remains a dryland crop in the mountainous parts of Gangwon and North Gyeongsang, and it can still be harvested in the same year even when sown late.
How to grow
- Light
- Six hours of direct sun or more. Panicles come out thin in shade
- Soil and depth
- Ordinary free-draining field soil is enough. Rich ground pushes height and the plants lodge
- Spacing
- 40 to 50cm between rows, 10 to 15cm between plants. Sow in drills and thin afterwards
- Watering
- Keep the surface damp only until germination. After that the crop handles drought well
- Feeding
- One base dressing is plenty. Extra nitrogen as a side dressing brings the plants down
- Harvest
- Cut the panicles once they have turned yellow and a pressed grain no longer takes a thumbnail mark. Dry a few days more, then strip and thresh. Wait for full ripeness and the birds get there first
What makes the difference. Panicles do not ripen all at once. Cutting when about 80 percent of the heads are ripe loses the least grain
Why this one is harder. The grain shatters easily. Carrying cut panicles loose spills them across the path, so hold a sack or basket underneath from the moment you cut
Common problems

What the Donguibogam records — nature, taste and the sticky/non-sticky split. The Donguibogam lists this grain in the Grain section as 黍米 with the Korean name gijang-ssal. It gives a warm nature, a sweet taste and no toxicity, while another passage adds that it carries slight toxicity and is not to be eaten over a long stretch. The entry distinguishes it from foxtail millet, notes three kinds including a red and a black, and explains that the sticky form is called 秫 and brewed into liquor while the non-sticky form is 黍 and eaten cooked, just as rice comes in non-glutinous and glutinous types. Red millet is described separately as having a red hull over a yellow grain. This is a historical medical record and differs from modern medical judgment.
Cereal protein composition analyses. Analyses of the amino acid profile of millet protein report a high prolamin share and comparatively little lysine. The finding explains, in compositional terms, the long-standing practice of cooking millet together with beans. This concerns composition and has no bearing on preventing or treating disease.
Reports on phenolic acid composition. Ferulic acid and other phenolic acids have been identified in proso millet grain, with analyses reporting higher levels toward the outer layers. Nutrition
- Carbohydrate (starch) (around 70g per 100g, dried) — the energy component of a mixed-grain bowl
- Protein (mostly prolamin) (around 11g per 100g) — a cereal protein low in lysine
- Fat (roughly 3g per 100g, high for a minor grain) — the reason milled millet turns stale quickly
- Minerals (magnesium, phosphorus) (concentrated toward the bran layer) — retention depends on how far the grain is milled
Carbohydrate and grain structure Dried proso millet runs over 70g of carbohydrate per 100g, nearly all of it starch. The grains are rounder and larger than foxtail millet, so they stay visible in a bowl of rice. The hull is firm enough that half an hour of soaking is needed for even cooking. Glutinous proso softens with less soaking.
Protein and lysine Protein sits around 11g per 100g, which is not low for a cereal. The profile leans toward prolamin, however, leaving lysine in short supply. That is the compositional logic behind the old habit of cooking millet together with beans. A handful of beans in the pot covers it.
Fat and staling Proso millet carries about 3g of fat per 100g, more than white rice. Once the hull is milled off, that fat meets air and the grain develops a stale smell quickly. In summer, keep it sealed in the refrigerator rather than in a cupboard. Buy in small quantities, enough for two or three months at a time.
A grain without gluten Proso millet has no protein equivalent to wheat gluten. Millet flour alone will not hold a dough, so glutinous rice flour is mixed in for cakes and breads. It is an option for people avoiding wheat, though shared milling and handling means the label still needs checking.
Pairings
○ White rice — A spoonful or two of millet in white rice adds a yellow cast and something to chew. Ten to twenty percent by volume works well; more than that and the rice turns dry. Soak for half an hour and cook it together.
○ Beans and adzuki — Millet is short of lysine and beans are rich in it, so cooking them together lets the two profiles cover each other. Soak the beans at least five hours first. The traditional Korean mixed-grain bowl settled on exactly this combination. Adzuki Bean · Soybean
○ Glutinous rice for cakes and brewing — Glutinous proso binds well when steamed with glutinous rice. The old text records the sticky form being brewed into liquor. At home, a simple millet rice cake is the easier project.
△ Milled millet kept too long — The relatively high fat content means hulled millet goes stale fast. Once that bitter smell sets in, rinsing will not keep it out of the finished rice. Buy small amounts, store sealed and refrigerated, and do not carry it through a summer.
△ Millet on its own, and large helpings — Cooked at a hundred percent, millet turns dry and many people find it heavy going. The Donguibogam itself notes that this grain is not something to eat over a long stretch. Use it as a portion of a mixed bowl rather than eating a great deal at once. That is a historical medical record and differs from modern medical judgment.
