Gorgon fruit (makhana)
Euryale ferox
Starch and flavonoids from the seed of a water plant, not a cereal grain
Gorgon fruit is the seed of Euryale ferox, a prickly water lily that grows in ponds. The leaves spread out to a meter or two across and the veins and stems bristle with spines, so you want thick gloves before handling the fruit. The Donguibogam, a 17th-century Korean medical text, described it as having large wrinkled leaves like a lotus and a fruit shaped like a rooster's head, which is why one of its old names translates as "rooster head fruit." In India and China the roasted seeds are eaten as a snack called makhana; in Korea they were more often boiled into porridge or ground into flour. One thing to know: in Korea the plant is a Class II endangered wild species. Without a permit, collecting it is prohibited, and so are processing, distributing, storing and transferring it, while propagation also requires government approval — so for a private grower there is effectively no legal route to seed. The makhana sold as a snack is imported, grown and processed at scale in India and China.

Where It Grows
- Main producer The ponds around Darbhanga and Madhubani in the state of Bihar yield most of the world's makhana.
- Main producer It is grown in the shallow ponds of Jiangsu, Anhui and Shandong under the name qianshi.
- Wild population It survives in reservoirs and marshes in the south and the centre of the country, but numbers have fallen and it is protected.
- Wild population It occurs sparsely in ponds in western Honshu and Kyushu.
It is native to ponds and marshes from East Asia through South Asia. In Bihar, India, it is a fully fledged cultivated crop, grown in ponds kept under water; in Korea and Japan, wild populations have shrunk, so it is a subject of protection rather than of cultivation. It is one of the rare cases in which the same plant counts as a field crop in one country and an endangered species in another.

An annual aquatic plant of ponds and marshes that are hot in summer and never dry out. The seed germinates in spring once the water rises above 15℃, the leaves open at their widest in midsummer, and the plant breaks down in autumn as the water cools. If the water dries up, the plant ends there.
In Korea Central Korea and south
It grows wild in reservoirs and marshes across southern and central Korea, including Upo Wetland in Changnyeong, South Gyeongsang. Because it is a Class II endangered wild species, it may not be dug up or moved from its native habitat without permission.
How to grow
- Light
- A water feature that gets at least six hours of direct sun. In shade the leaves never lift properly.
- Soil and depth
- Lay 15 cm or more of paddy clay or aquatic planting mix on the bottom. Ordinary potting mix floats up and clouds the water.
- Spacing
- A single leaf can pass a meter across. One plant per tub or trough of at least 60 cm diameter.
- Watering
- Hold the water 30-60 cm deep. If it dries out the plant dies outright, so top it up daily through summer.
- Feeding
- Bury one or two slow-release aquatic fertilizer tablets in the clay. Fertilizer dissolved straight into the water just feeds algae.
- Harvest
- Pick in August or September, when the fruit swells into its rooster-head shape and the skin splits. Steam it and dry it in the sun, and the husk opens on its own.
What makes the difference. The seed loses viability once it dries, so store it submerged and sow in April when the water passes 15 C. Wild collection is illegal, so use seed from a legitimate supplier.
Why this one is harder. The leaves spread one to two meters across and it needs a tub that holds standing water, so an ordinary pot will not work.

Health Benefits
What the old text says. Gorgon fruit appears in the Donguibogam's fruit section as geomin (芡仁). The entry describes the leaves as large, wrinkled and spiny like a lotus leaf, and explains one of its old names from the fruit resembling a rooster's head. This is a record from a seventeenth-century medical text, not a modern medical judgement.
Antioxidant research. Studies have reported antioxidant activity of gorgon fruit seed extract measured in test tubes and animal models. Clinical evidence in humans remains limited.

A starch seed Dried gorgon fruit is about 75% carbohydrate by weight, which makes it a starch seed rather than a nut. Fat comes in under 1%, so it behaves nothing like an almond or walnut. Toast it in a dry pan and it puffs up light and crisp, at roughly 350 kcal per 100 g. Grinding it into flour for porridge or rice cakes is the oldest use.
Protein and minerals At 9-10% protein by dry weight, it carries more than most starchy staples. Potassium, magnesium, and phosphorus come along with it, and sodium is essentially absent. Simmered into porridge the grains break down softly, which is why it turns up in recovery meals and baby food.
Polyphenols in the seed coat The seed coat and endosperm contain flavonoid and polyphenol compounds. Several studies have reported measurements of antioxidant activity under test-tube conditions. Milling the outer coat away removes a good share of them.
Pairings
○ Milk and rice porridge — Grinding toasted seeds into milk or rice porridge fills in the protein and calcium that plain starch lacks. In India it is simmered in milk as a pudding called kheer. It takes almost no chewing, which makes it easy to work into meals for children or older family members.
○ Jujube — Adding dried jujube to the porridge or tea brings enough sweetness that you can skip the sugar. Old prescriptions often decocted several fruits together in exactly this way. The slight tartness of jujube also lifts what is otherwise a flat, starchy flavor. Jujube
○ Salt and a little oil — Toast the seeds dry, salt them, and you have something to snack on in place of popcorn. Use only a trace of oil or they go soggy. Cool them completely before sealing them in a jar, otherwise steam softens the crunch.
△ Do not collect from the wild — Euryale ferox is a legally protected endangered species in Korea. Taking the fruit or digging up the roots from a reservoir or wetland carries a penalty. If you want to eat it or grow it, buy seed or kernels through normal trade channels.
△ Spines and unripe seeds — Hard spines cover the fruit skin, leaves, and stems, and bare hands will get cut. Wear thick gloves to process it, and steam the seeds before peeling them. Unripe seeds stay astringent and hard, and are not worth eating.
△ Eating too much — It is essentially concentrated starch, so large portions mean calories and a blood sugar load to match. Old records treated it as an astringent, binding food, so anyone who already struggles with constipation should keep portions small. A handful at a time is plenty.
Varieties
- Wild Korean prickly waterlily (Seed) — A protected species surviving in a few southern reservoirs. Collecting is prohibited.
- Indian and Chinese cultivated type (Seed) — Grown at scale in ponds; the roasted seed is sold as makhana.
- Lotus seed (Seed) — A different plant with a similar name. No spines, and far easier to obtain.
