Foxtail Millet

Fiber and phenolic acids · the hardest of the old five grains
Foxtail millet is an annual cereal with very small grains; hulled, they are the yellow beads sold as jopssal in Korean markets. It splits into a non-glutinous type used in mixed rice and a sticky type used for porridge and rice cakes. The Donguibogam lists it in the Grains section as 粟米 (songmi), noting that its nature is slightly cold, its taste salty, and that it carries no toxicity. The same text separates the fine-grained 粟 from the coarser 粱 and says millet is the hardest of the five grains, hence the name 硬粟, hard millet. Shallow-rooted and tolerant of dry soil, it will set a head or two even in a 20 cm deep box planter.

It is thought to have been domesticated from wild green foxtail (Setaria viridis) in the Yellow River basin, and China still accounts for most of the world's production. One caution when reading the statistics: the "millet" category in international figures is mostly pearl millet from India, Niger and Nigeria, so it does not map one-to-one onto foxtail millet. The three countries listed above were chosen as places where foxtail millet itself is clearly grown, rather than for that broader grouping, and the crop also survives on a small scale in Indonesia, Korea and southern Europe.

A summer grain that stands up well to heat and drought. It grows quickly and uses little water, so it has long been raised on dry fields and in mountain country where paddy farming is difficult. Frost kills it, so it is sown in late spring and cut before the first frost. The heads emerge in late summer, as the days shorten.
In Korea Nationwide
Sown in May and June, cut in September and October. As a minor grain raised on dry fields that are hard to irrigate, it survives in the uplands of Gangwon, North Chungcheong and North Gyeongsang, and on the fields of Jeju.
How to grow
- Light
- Six hours or more of direct sun. Weak light gives thin, stunted heads
- Soil and depth
- At least 20 cm deep. Poor soil is fine as long as it drains
- Spacing
- 20 to 25 cm between plants. Crowded stands lean on each other and go down together
- Watering
- Water when the surface dries. It handles drought well but rots where water pools
- Feeding
- Base fertilizer is enough. Heavy nitrogen top-dressing makes tall stems that fall over
- Harvest
- Cut when the head bows and the grain turns yellow, roughly 100 to 120 days after sowing
What makes the difference. Cut whole heads, dry them in shade for two weeks, then thresh. Storing them damp invites mold
Why this one is harder. Lodging. Stems over a metre tall go flat in wind. Stake before heading, or mound soil around the base

Health Benefits
The Donguibogam record. The Donguibogam lists foxtail millet in the Grains section as 粟米 (songmi). Its nature is described as slightly cold, its taste as salty, and it is recorded as carrying no toxicity. Aged millet appears separately as 陳粟米 with a bitter taste, aged meaning grain kept three to five years. The text also explains the name — the fine grain is 粟 and the coarse one 粱 — and describes soaking the grain for several days, grinding it and letting the starch settle to make a fine powder. This is an old medical record and differs from modern medical judgment.
Post-meal blood glucose comparison. Studies have reported that mixed-grain rice containing foxtail millet produced a flatter post-meal blood glucose curve than white rice alone. The reports note that degree of milling and blending ratio move the numbers considerably. These compare ways of cooking a bowl of rice and have no bearing on the prevention or treatment of disease.
Antioxidant analysis of the bran. Analyses of foxtail millet bran extracts measuring phenolic acid content and antioxidant activity have been reported. The same work notes that measured values fall as milling proceeds. This concerns composition only and has no bearing on the prevention or treatment of disease.

Fiber sits in the bran Most of the fiber in foxtail millet sits in the outer layer, so the less it is polished the more remains. Mixing about 30 percent millet into white rice noticeably coarsens the texture. Fiber holds water, so the cooked mixture dries out more slowly as it cools. Heavily polished millet loses much of that difference.
Protein and the lysine gap Foxtail millet is high in protein for a cereal. Its weak point is lysine, an essential amino acid it carries little of. Old Korean tables answered this by cooking millet with black soybeans or adzuki beans. Pairing a grain with a legume is a pattern that recurs across many food cultures.
Phenolic acids in the outer layer The bran layer holds ferulic and p-coumaric acid. These compounds are the usual markers when laboratories measure antioxidant activity in cereals. Polishing strips the layer and the compounds go with it. The yellow of the grain itself comes from carotenoid pigments.
A grain without gluten Foxtail millet contains no wheat gluten. Flour made from it will not build the elastic network that lets bread rise. Cooking traditions instead lean on porridge, steamed cakes and thin griddle breads, where viscosity comes from starch rather than gluten. That is also why it appears on gluten-free grain lists.
Pairings
○ Black soybeans and adzuki — Millet is short on lysine and beans are rich in it, so the amino acid profile fills out when they are cooked together. Korean millet rice with black soybeans is the long-standing version of this pairing. Soak the beans first or they will still be firm when the millet is done. Adzuki Bean
○ Rice — Millet cooked alone falls apart and is awkward to serve. Blended at 20 to 30 percent into white or brown rice it holds together while keeping the grainy texture. Rinse it in a fine sieve, since the beads are small enough to wash straight down the drain.
○ Jujube and chestnut — Sliced jujube and chestnut give millet porridge enough sweetness to need nothing else. Keep the heat low and stir until the grains break down completely, or the base will scorch. Use seven to eight times the volume of the millet in water. Chestnut · Jujube
△ Birdseed millet — Millet sold as feed for cage birds is not handled to food-grade standards. It looks identical to the culinary kind, which is exactly how it ends up in a rice pot by mistake. Buy only grain labelled for human consumption.
△ Cooking it unsoaked — Foxtail millet is among the hardest of the old grains and stays chalky in the center if it does not take on enough water. Soak it for at least 30 minutes and add a little extra cooking water. Undercooked grains sit heavily.
△ Switching a whole meal to mixed grain at once — Going straight from white rice to a heavily mixed grain bowl raises fiber intake sharply, which can leave the gut gassy and uncomfortable. Start at 20 to 30 percent and raise it over several weeks. Drinking more water alongside helps.
