Autumn sowing is gardening with an eye on kimjang (the seasonal making of winter kimchi) and overwintering. From late August, when the lingering summer heat finally eases, through October, crops grow slowly in the cooling air and develop their sweetness. Cabbage and radish, the backbone of kimchi, must go in now to head up properly, while garlic and onions, which spend winter underground, need to root in autumn to fatten up by the following spring. Filling the beds left empty by spent summer crops with autumn ones rounds out the year nicely.
